Recipe: Strawberry Cheesecake Shakeology®

At this year's 2011 Beachbody Coach Summit, the Shakeology chefs came out in force with the ultimate recipes they'd developed to shake up their daily Shakeology regimen. In the Greenberry category, the winner was Sharon T. Her yummy recipe marries the deliciousness of cream cheese and strawberries to the health benefits of Greenberry Shakeology—try it today!
  • 1 scoop Greenberry Shakeology
  • 1 cup strawberries
  • 1 Philadelphia 1/3 Less Fat Neufchâtel Cheese Mini (1.25 oz.)
  • 1/2 cup unsweetened almond milk
  • 1/2 cup water
  • Ice (to taste)

Place ingredients in blender and blend until thoroughly mixed and creamy. Makes 1 serving.

Recipe: Blueberry Buckle

Blueberry Buckle

Here's a delicious, guilt-free dessert that combines the healthy goodness of steel-cut oats with sweet, antioxidant-rich blueberries. Enjoy!
  • 2/3 cup steel-cut oats
  • 1/2 cup fresh blueberries
  • 1 Tbsp. slivered almonds
  • 1/2 tsp. cinnamon
  • 1/2 cup water
  • Optional: Honey, stevia, or raw sugar (to taste)

Preheat oven to 350 degrees. Combine all ingredients in a small glass baking dish. Mix well. Bake for 20 minutes. (Or you can microwave on high for 1-1/2 minutes.) Allow to cool slightly before serving. Makes 2 servings.
Preparation Time: 40 minutes (including mixing, baking, and cooling)

Recipe: Mexican Frittata

Not quite an omelet. Not really a quiche. What it is, however, is delicious! This high-protein dish features a healthy combo of eggs and egg whites, along with peppers, onions, and your favorite salsa. ¡Olè!
  • 1 tsp. olive oil
  • 1/2 red pepper, cut into thin strips
  • 1/4 medium white onion, thinly sliced
  • 1/4 cup skim milk
  • 2 whole eggs
  • 4 egg whites
  • 1/2 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 1/8 tsp. cumin
  • 1/2 cup salsa (use your favorite kind)

Preheat oven to 350 degrees. In medium bowl, combine milk, eggs, egg whites, salt, pepper, and cumin; blend with a whisk and set aside. Heat oil over medium heat in a 12-inch nonstick skillet with oven-safe handle. Add pepper and onion and sauté until tender. Pour egg mixture into pan with sautéed vegetables and cook without stirring until eggs are slightly set, then flip over. Place pan in oven and bake until eggs are cooked, about 5 minutes. Place frittata on a plate and top with salsa. Serves 1.

Recipe: Avocado Tuna Salad

From the INSANITY: THE ASYLUM nutrition plan, here's an easy-to-prepare recipe that'll take care of all your daily omega-3 needs, with healthy fats from tuna and avocados to keep you feeling full and fit.
  • 1/2 avocado, mashed
  • Juice from 2 lime wedges
  • Dash of salt
  • Dash of cayenne pepper
  • 5 oz. light tuna (packed in water)
  • 1 cup mixed greens
  • 1/2 cup alfalfa sprouts
  • 1 slice tomato

Place avocado, lime juice, salt, and cayenne in a mixing bowl and use a fork to mash into a paste. Drain tuna well and add to bowl; mix well. Pile mixed greens on a plate and top with tuna/avocado mixture. Finish with sprouts and tomato. Makes 1 serving.

Recipe: Flaxseed Waffles

Waffles are a breakfast treat we usually don't think of as being all that healthy, but the addition of ground flaxseed ups the fiber, protein, and omega-3s, as well as important nutrients like B vitamins, calcium, and iron. To send any remaining waffle-related guilt packing, dish these babies up with nutritious toppings like yogurt and berries or unsweetened applesauce.
  • 2 cups whole wheat flour
  • 1 cup white flour
  • 4 Tbsp. sugar
  • 6 Tbsp. baking powder
  • 4 Tbsp. ground flaxseed
  • 1/2 tsp. salt
  • 4 large eggs
  • 3 cups skim milk
  • 1/4 cup olive oil

Preheat waffle iron. Mix flours, sugar, baking powder, flaxseed, and salt in one bowl and set aside. In a separate bowl, mix eggs, milk, and oil, then add wet ingredients to dry and whisk until smooth. Pour about 3/4 cup of batter into waffle iron for each waffle. Waffles will steam while cooking; cook until they've almost stopped steaming. Makes about 11 1-waffle servings; any extras can be frozen and reheated in toaster or toaster oven.
